how can i update my version 2.3.1 to the new 2.3.3 without loosing my options, templates and data bases...

Download 2.3.3. Extract 2.3.3. Replace your current guestbook files with 2.3.3 files EXCEPT the config.inc.php file in the admin folder as this has your database settings in it.

You don't. They are in your database they are not a file. they will not disappear.
