You need to edit the config.inc.php file which resides in the admin folder. You need to put your database details in there.

You could have the emails sent to you in HTML format instead of plaintext that way the HTML entities would appear correctly. Email me add.class.php and I will mod it for you.

Well go in with filezilla. Right click on the tmp and public folders and select permissions.

CHMOD is something you do with your ftp client or file browser. Do a search on this forum for more details.

CAPTCHA is the test where you type in the characters from the image.

The captcha switch is something like USE_CAPTCHA in config.inc.php

It is refering to the database username and password which are stored in the config.inc.php file.
